Coconut Prawns With Chilli Dressing

King prawns dredged in flour, dipped in milk and egg batter then coated in shredded coconut and coriander mixture. Pan-fried til golden then drizzled with chilli dressing. That creamy coconut dressing was divine with infused Asian balanced flavours of kaffir lime, lime juice, palm sugar, ginger, garlic, shallots, chilli, turmeric and fish sauce. These prawns can be an appetiser when served with mixed salad leaves or for a full Asian dining experience, serve them on top of white rice then drizzle with the chilli sauce.Ingredients

(Serves 4 as an entree)

  • 24 raw king prawns, peeled and deveined, with tails left intact
  • plain flour, to coat
  • 1 egg
  • 1 tablespoon milk
  • 1 cup shredded coconut
  • 1/2 cup chopped fresh coriander
  • 2 1/2 tablespoons oil
  • 300g red Asian shallots, chopped
  • 2 cloves garlic, finely chopped
  • 2 teaspoons finely chopped fresh ginger
  • 1 red chilli, seeds and membrane removed, thinly sliced
  • 1 teaspoon ground turmeric
  • 270ml coconut cream
  • 2 kaffir lime leaves, thinly sliced
  • 2 teaspoons lime juice
  • 2 teaspoons palm brown sugar
  • 3 teaspoons fish sauce
  • oil, for shallow frying
  • 1 tablespoon chopped fresh coriander leaves, extra
  • 150g mixed lettuce leaves

Method

1.   Holding the prawns by their tails, coat them in flour, then dip them into the egg and milk mixture and then in the combined coconut and coriander. Refrigerate for 30 minutes.2.   Heat the oil in a saucepan and cook the shallots, garlic, ginger, chilli and turmeric over medium heat for 3-5 minutes or until fragrant.3.   Add the cream, lime leaves, lime juice, sugar and fish sauce. Bring to the boil, then reduce the heat and simmer for 3-5 minutes, or until thick. Keep warm.4.   Heat cooking oil in frying pan and cook prawns in batches for 3-5 minutes, or until golden.5.   Drain on paper towels and season with salt.6.   Add the extra coriander to the dressing. Divide the lettuce among bowls, top with the prawns and drizzle with the dressing.Recipe from Modern Australian Food cookbook.
