Crab Omelette With Avocado And Mint Salsa

Omelette for dinner. I am sure my family is not the only one who enjoys omelette for dinner. It’s an easy meal to prepare, light but ironically very filling.The avocado and mint salsa was the perfect complement to this otherwise plain crab omelette.Ingredients

(Serves 3)

For the omelette

  • 6 eggs
  • 2 tablespoons snipped chives
  • 2 teaspoons brown sugar
  • 2 tablespoons olive oil
  • 350g crab meat ( canned is good, drained)

For the avocado salsa

  • 1 avocado, diced
  • 1 cup mint leaves, torn
  • 2 salad onions, thinly sliced
  • grated zest and juice of 1 lime
  • 1 red chilli, sliced (optional)
  • 1 teaspoon white sugar
  • drop of sesame oil


1.    To make salsa, combine avocado, mint, chilli (if using) and salad onion in a small bowl. Mix together lime zest and juice, white sugar and sesame oil. Add to salad and toss to combine.2.   Lightly whisk eggs, chives and brown sugar together in a small jug. Heat oil in medium frying pan on high. Add egg mixture and using a spatula, pull edges of egg into centre as it sets to release uncooked egg out of edges of pan. Cook for 2-3 minutes, or until base is set.3.   Transfer frying pan to a pre-heated grill and cook for 1-2 minutes, or until puffed and set. Scatter crab meat over one side of omelette. 4.   Fold over, cut into serving portions and slide onto serving plates.5. Top with salsa and enjoy!
