Chocolate Coconut and Pistachio Brownies

Brownies are my favorite treats to make. Now this one I tried recently was very different from the usual chocolate-y and fudgy ones I bake. This was more like a slice actually, with the moist and sweetened coconut flakes and pistachio nuts adding that crunchy texture and delicious tropical touch to it. Think of coconut macaroons but chocolate flavored and nutty. Maybe this photo will help you visualize it. Ingredients


1.   Heat oven to 175C degrees. Grease and line a 16 x 26cm slice tin with baking paper.

2.   Combine butter, sugar, egg and vanilla in a bowl. 3.   Sift together flour, cocoa, baking powder and salt in another bowl. Add with 3/4 cup moist coconut flakes and pistachio nuts.4.   Add the flour mixture to the butter mixture. Mix together well. Spread mixture evenly over tin. Sprinkle remaining coconut flakes over top. You may add a few more coconut flakes if you wish.5.   Bake for 25-30 minutes or until brownies begin to pull away from sides of tin. Cool completely in pan. Cut into 16 squares.Recipe from

      Thanks! To think the recipe I found says ….optional to add pistachio nuts ….that wasn’t even an option ….how can you think of not adding pistachios? 😀
