After Dinner Mint Cheesecake

After a quite heavy meal, something minty can be really nice. I know, I know it’s a cheesecake but this is lighter than the traditional cheesecake as this doesn’t have a biscuit base. The hint of peppermint flavor is refreshing with every spoonful of this creamy cheesecake.Ingredients


1.   Beat together cream cheese, sugar and peppermint essence until smooth. Beat in cream until well combined.

2.   Pour melted chocolate over cream cheese mixture. Lightly fold through to create a swirl.3.   Spoon into serving bowl or glass. Chill in the fridge for at least an hour.4.   Top with chopped peppermint crisp bar before serving. This serves 3-4 depending on bowl or glass capacity, or depending on appetite. 🙂
