Summer Season’s Star

One of the things I love about summer in Australia?  It’s stone fruits season! I love peaches, plums, apricots, cherries and nectarines. So versatile you could eat them as they are or use them to create wonderful treats like this maple roasted nectarines. Nectarines have two types, the yellow-fleshed or white-fleshed. I love the crisp white-fleshed ones but for this dessert, we are using the yellow-fleshed type, which have a classic flavor with high sugar and acid.

Maple Roasted Nectarines

(Serves 6)

Preheat oven to 180C degrees or 160C degrees fan-forced.

Cut each nectarine into 6 wedges. Discard stones.

Place fruit in a baking dish, cut side up. Add cinnamon quill to the dish. Combine maple syrup, vanilla essence and water.

Drizzle maple mixture over fruits.

Dot with chopped butter.

Roast for 30-40 minutes, depending on ripeness of fruit, or until soft and caramelized.

Serve warm with syrup or for a delicious treat, serve with vanilla ice cream.

Personally, I like it served cold with vanilla ice cream. Let it cool in the fridge and let the flavors develop. The rich taste of the caramelized nectarines is just divine.
