One of the things I love about summer in Australia? It’s stone fruits season! I love peaches, plums, apricots, cherries and nectarines. So versatile you could eat them as they are or use them to create wonderful treats like this maple roasted nectarines. Nectarines have two types, the yellow-fleshed or white-fleshed. I love the crisp white-fleshed ones but for this dessert, we are using the yellow-fleshed type, which have a classic flavor with high sugar and acid.
